Confetti Quinoa Salad with Lime Vinaigrette

2 c cooked quinoa, cooled
1 (14.502) can black beans, drained and rinsed
1/2 red bell pepper, diced
1 mango, diced
1/2-1 avocado, diced (optional)
1 green onion, sliced
1/4 cup cilantro, chopped (optional)
2-3 Tbsp lime juice
1 Tbsp red wine vinegar
1 Tbsp olive oil
1/4 tsp pepper, or to taste
1/4 tsp salt, or to taste

In a large bowl, combine quinoa, beans, bell pepper, mango, avocado, green onion, and
cilantro. In a small bowl, whisk together lime juice, vinegar, olive oil, salt and pepper. Pour
dressing over quinoa salad and toss to coat.  Chill until ready to serve.
